Breakfast Troubles

Today Paige got lectured by the school nurse about her breakfast habits.

Now, before you think the nurse is a big ol' meanie, we adore her. She's a bit protective of Paigey because of her health issues which cause her to need to eat every few hours, and knowing I have someone at school who's looking out for my girl is a big relief.

But my poor girl wasn't feeling well today and was pretty upset. She told me about it when we got home, and of course, me being me, felt like an awful mother.

I know that toast with cream cheese is not the best breakfast for my daughter. It's not the best for the boys either, but it's especially not good for a kid who has certain rules she needs to follow in order to stay healthy. At least they're eating something, right?

But when someone likes to drag their feet in the morning, finding something quick to eat is not easy. After hearing from Paige about the nurses concerns, little voices started going off in my head:

If you were a better mom, you'd get up earlier to make her a better breakfast.

Maybe if you planned your mornings better your daughter may follow in your footsteps and not drag her feet and then scramble all the time.

Yes, I know, I'm being hard on myself. But I could definitely be doing better about what all of us eat for breakfast (cause let's face it, toast smothered in butter is probably not the best thing for this busy momma to eat every morning, either!)

Tonight I started some research on healthy breakfasts. Pinterest was the first stop, of course! I found some easy and healthy recipes, and best part is I can make some on the weekends and freeze for later in the week. Some of my favorites that I found were Scrambled Egg Cups and Breakfast Pizza.

It was really discouraging because a lot of the healthy recipes call for things that I don't buy or don't really need to be using in our diets. Yes, okay, so maybe all purpose flour isn't the best thing, and eggs might not be that great. I don't mind substituting for a lot of things, but I don't really want to go dairy free/gluten free/vegan. That doesn't fit in our family's lifestyle right now.

So I'm asking you all for any healthy (but not super ridiculously healthy) and easy recipes you may have for breakfasts. My kids aren't super picky about ingredients, and I'm the only one with a food allergy (silly artificial orange flavoring!).     Second, the english muffin pizzas and egg cups are favorites in our house. I throw them in the freezer and then just pop them in the microwave when I need them. Breakfast burritos are another good option. Tortillas, scrambled eggs, cheese and then veggies and/or meat. They're freezable, too! :) I have a whole pinterest board dedicated to breakfast - because it's my favorite! I'll take a look through it tomorrow and see if there's anything else that might be good.

      I tend to be my biggest critic and always feel like I could be doing more. I need to remember I'm not perfect and I can only do so much.

  2. I have a pumpkin muffin recipe that I modified. Lots of pumpkin and tons of oats, so it is kind of a pumpkin oatmeal recipe. I'm also a huge fan of boiling a dozen eggs and peeling them all at once and having them in the fridge ready for breakfast.

    That is the link to the base recipe for the muffins. I cut the sugar by a decent amount (nearly half), I add vanilla, use whole wheat flour, double the pumpkin, and add a cup of rolled oats.

  3. How about plain old oatmeal? It takes about 3 min on the stove top. :o) Or even cold cereal with a banana? I also put a granola recipe in the church cookbook. Add some dried fruit to that for a more well-rounded meal.
